The most talked about dish this year was a bowl of Khichdi which became the National dish of India. There is no doubt that it is the most humble and tasty dish in our country. Each individual at some point or the other must have had khichdi. It is an amalgamation of rice and lentils with the right amount of tadka to make it a beautiful dish.
For a while, the internet went beserk about the possibility of having a national dish of India. The khichuri, khichdi, khisiri, pongal, bisi bele baath, pulagam, haleem, kedgeree, and the many other names it is called in its particular place of cookery is not really that humble a preparation as I have tried to give it a masaledaar dhaba style tadka. Here is the recipe of one of the tastiest dhaba style version you will ever find.
Ingredients: 1 & 1/2 cup Dhooli Moong Dal 1/2 cup Rice Water or vegetable stock 1 tsp Veg Oil Chopped Tomato Chopped Onion Ghee Dhaniya Powder Chili Powder Salt Fennel Seeds Hing Turmeric Powder Curry leaves Pepper Process: Soak Rice & Dal for 20 mins. Pressure Cook it with turmeric & salt and leave it for 4 whistles. First Tadka : In a pan add vegetable oil, chopped onion, chopped tomato, adrak lehsun paste. Cook it till onion is translucent. Add Dhaniya powder, a pinch of red chili powder and some pepper. Cook for 2 mins and add this mixture to Khichdi. Second Tadka In a pan take 2 tsp ghee, add fennel seeds, hing and add curry leaves. Pour this on top of garma garam khichdi and enjoy a bowl full of gold.
